Swedish Hoovers – a Classic Swedish Cookie Literally Named Vacuum Cleaner

The concept behind classic Swedish hoovers is rather clever. From an era when everything was to be saved, it was a way to use up what might be wasted and create something new out of it. Using cookies that were too old or broken, they mixed them with some apple sauce and punch liqueur and rolled them into a log then wrapped it in a layer of green marzipan.

Today we’re making our own variation and we’re going to clean up the last little bit of some leftover cooked quinoa and spinach that will become this little cookie. The result was surprisingly like the original, dare we say, better!

Swedish Hoovers
(10 pieces)

Cookie dough:
1 cup cooked white quinoa
¾ cup coconut flakes
10 dates
2 tablespoons cacao
4 teaspoons of arrack extract – the punch liqueur – (or just sub 2 tsp spiced rum)

Marzipan:
2 ½ cup almond flour
4 tbsp honey
2 tablespoons baby spinach

100 g of dark chocolate

Add boiled, chilled quinoa to a blender.

Then add cocoa, dates, arrak extract and coconut. Mix into a dough.

Separately, mix the honey and spinach with a bit of almond flour in a blender until you get a green dough. Add a little almond flour at a time and mix until you get a smooth, green almond paste. Too sticky? Add a little extra almond flour.

Roll out the green almond paste between two parchment papers to about 25×35 cm. Divide into three equal lengths, 8×35 cm.

Divide the cookie dough into three equal portions and roll them out to 35 cm long rolls. Place a roll on each marzipan length. Roll the cookie dough logs up in the marzipan and pinch the edges. Cut each vacuum cleaner roll into decent sized pieces. Melt the chocolate and dip the ends of each hoover into the melted chocolate.

Put the vacuum cleaners on a dish and put them in the fridge for about 10 minutes until the chocolate hardens.
