This made a fantastic coconut milk kefir overnight – and with a spoonful of gelatin thrown in, it became a proper firm yoghurt after refridgeration.

Hygienic because it can be made as a pack. Mix the yoghurt inoculum with a 1L pack of freshly opened soymilk and place it next to a heated rice cooker or electric pot!

This starter works very well and once a batch has been made, a portion of that batch can be used to make the next batch – so far I have used the one packet (5g) for 5 different batches in succession. It makes a pleasant creamy product though not as thick as commercial products ( I have given up using thickeners as these tend to make rather lumpy yoghourt and are in any case unnecessary in my opinion). Overall, a very satisfactory yoghourt starter. Of course one needs to use a non-dairy milk with sufficient protein content – almond milk doesn’t cut it. I use whole-bean soy milk.

I’ve tried two times with coconut milk but it didn’t work twice. The consistency of yogurt didn’t change even in 24 hours. It supposed to be thick and rich but it was as liquid as coconut milk. Waste of money for me

Depending on where you live – out on the benchtop in a warm spot can work (it will just take longer) or some people recommend the oven with the light on only. I sometimes put mine on top of my coffee machine (with a cloth in between so it doesn’t come in direct contact with the heat.
