I love using almond flour to bake muffins. I was wondering if there are any updates about the grain free flour recipe? Our gluten full recipe is 3 cups flour, 3/4 cup milk, 1 stick of butter, 1/3 cup of honey and a dash of salt. If you use this combination and you plan to make one of my multigrain bread recipes, consider using teff flour as the additional whole grain flour, because the combination works really well. Allowing the batter or dough rest for 30 minutes is recommended to allow the flour to absorb moisture so grittiness is avoided. This rice bread is made using a mixture of brown rice flour and white rice flour. I dabble with my own gluten free mixes (I made a modified version of the thomas keller blend without the gums, and with superfine rice flours). We use bobs brown rice flour and my husband is extremely sensitive to corn and he never has any reaction. I may not be able to help you on bread since my bread flour mix contains both sorghum and millet, but i can with the pizza crust (And you can see the frequently asked questions about the flour mixes here on this blog if you ever are able to find one of the two flours). If you are converting a family recipe to gluten-free, gf jules is a great flour to use! Also, i store my flour mixes in the frig and am never quite sure if i need to bring my ingredients to room temperature or not. Have you tried the general purpose flour mix from costco? Although i do not financially benefit from the sale of gf classic blend, it sure is nice to just be able to open a bag of flour and bake. The recipe contains 1 cup of my brown rice flour mix (And the pizza works well with a larger grind of brown rice flour) and 1/2 cup of millet flour. My questions is if 1 cup of your flour mix is 4,5oz, then can i weigh out the component flours by parts to make up 4,5oz. Going from box gf flour blends to making my own is quite the learning curb especially because i am the type of person who feels more compfortable when i understand the reasons behind why something does what it does and why this works better then that etc. You cannot substitute almond flour in either a gluten free recipe or conventional recipe without making many recipe adjustments. If baking bread, use flours with a high protein content to add flavor and texture. Also, quinoa flour develops a strong flavor when it is rancid. I have had an enquiry for rusks now, and considering that your flour mix is not an option for bread, do you think the same will apply for rusks? I find that baking with sorghum or gluten-free oat flour provides more structure without having to add tons of egg white, but i heard that superfine flours do not have the graininess that regular rice flours have. I made the snickerdoodles without xanthan gum and without superfine rice flour. If your house is hot and humid, or if you will not be baking for long periods of time, store them in the refrigerator.
