I add it to flour when baking pizza, white bread with sourdough, make seitan and many other places where you can use this protein, protein. Look at the photo, with what charming holes you get bread with a small amount of this flour! I love using this to make my keto bread. Some people might just be going by wheat but do not let this stop you as this is not the actual part of the wheat that creates inflamation. Just stay away if you have gluten issues tho.
