If you use this combination and you plan to make one of my multigrain bread recipes, consider using teff flour as the additional whole grain flour, because the combination works really well. Allowing the batter or dough rest for 30 minutes is recommended to allow the flour to absorb moisture so grittiness is avoided. This rice bread is made using a mixture of brown rice flour and white rice flour. I dabble with my own gluten free mixes (I made a modified version of the thomas keller blend without the gums, and with superfine rice flours). I tried out the flour blend and it was really really good! In my recent savorfull sampler box they gave us a package of noodles made from navy bean flour as well as just a bag of the flour itself. This will effect the taste and texture slightly, kind of like using a whole wheat flour versus a white flour in conventional baking. I was thinking of making this blend of flour, but i wanted to know if it affects how the taste of things you cook. For this recipe, since i did not have brown rice flour or potato starch i did 5 cups sorghum, 1 cup white rice, 1,5 cups tapioca flour, 1 cup arrowroot starch, 0,5 cup corn starch, and 5 teaspoons xanthan gum. First, get familiar with all the different gluten-free flours. They are excellent additions to higher density flours, such as coconut and oat flour. My grandson is already gf/cf and recently tested positive for sensitivity to brown rice/brown rice flour, white potato/potato starch/potato flour, so we can no longer buy the commercially available gf flour mixes as they usually contain one or more of those ingredients. Almond flour is an incredible gluten-free alternative with an amazing nutty taste. Sometimes you may also need to add a bit more xanthan gum to help with the structure (Remember it is a very dry flour and absorbs and holds moisture differently than rice flour, which affects the moisture available to help set the gum).
