I tried miso soup at a japanese restaurant a few weeks ago and kinda liked it. It used to be that miso soup differed, taste-wise, at every different family table in this country, with recipe handed down from mothers to daughters in the same family. So here, quinoa went into an easy miso soup with meatballs. I am not sure what to expect since it’s my first atempt ar miso soup. Available at all natural food stores and asian groceries (As is the sea vegetable kombu), pungent-tasting miso is most commonly used to make simple broths. In europe or north america, you can find miso in most asian grocery stores, as well as some conventional grocery stores. I have no need for soy sauce, salt or anything else, because that only makes a bad soup in my opinion. It is absolutely chock full of tofu and other ingredients if you follow the recipe exactly, but if you are ore of a broth person like me i’d go with a bit less stuff when making it. They make this miso soup recipe extra light, nourishing, and fresh!

Here is a basic recipe, which really should be considered a soup in itself rather than as a stock for making other soups. I tried the three varieties, and while i enjoy them all, my absolute favorite is the spicy red miso soup made with shiitake, enoki, nameko and maitake mushrooms. I like to make a big pot of soup and have it for lunches through out the week. I have had much better miso soup in restaurants and one place i know uses soft tofu and somehow blends it in the soup so it almost looks like egg. After stirring in the miso, i ladle the soup over chunks of silken tofu. The most common dashi soup stocks for miso soup are made of niboshi (Dried baby sardines), kombu (Dried kelp), katsuobushi (Thin shavings of dried and smoked bonito, aka skipjack tuna), or hoshi-shiitake (Dried shiitake). Making vegan miso soup is incredibly quick and easy. I wanted to love this recipe, i really did :(My entire family of four loves miso soup, but none of us could eat this.
