Good helper in gluten-free pastries. Here’s a great recipe for a vegan cake for Christmas: Rice flour 50 g? Banana 1 pc? Pumpkin 100 g? Sugar 80 g? Pear juice 180 ml? Olive oil 40 g? Almond flour 100 g (can be replaced with corn)? Baking powder 1 tsp? Apple cider vinegar 1 tsp? Salt 1/3 tsp? Cinnamon 1/2 tsp? Corn starch 45 g? Grated zest from 1 orange? Prune 40 g? Dried apricots 30 g? Rub the peeled pumpkin on a coarse grater, mash a banana with a fork. Add sugar, pear juice, mashed banana, vinegar, salt, olive oil to the pumpkin – mix. Dice the prunes and dried apricots, add the zest of the orange – re-mix the resulting mass. In a separate bowl, mix the flour, baking powder, corn starch and cinnamon. Combine everything in one bowl and mix until smooth. Lubricate coconut (or olive oil) cake pan. Place the dough for the cake in the mold and send it to the oven preheated to 170-175 C for 40-60 minutes
