I sometimes replace half of the millet flour with sorghum flour, but either way, it is a great blend. Sorghum flour is made from an ancient cereal grain that has been grown for more than 5,000 years. I use brown rice and white rice flours together in my gluten free flour blend because i like the color of the finished baked goods. The original recipie for regular flour does not call for baking soda and i am just starting with gluten free products so i did not add it. A bleaching agent would affect only the carotenoids in the flour; a maturing agent affects gluten development.
